Today we’d like to introduce you to Jeff Smith.
Hi Jeff, so excited to have you with us today. What can you tell us about your story?
I’ve always had a passion for cooking. There’s something incredibly rewarding about making food for people and seeing their reaction when they take that first bite. As far back as I can remember, people have told me I should become a chef. Ironically, I always resisted the idea because I thought turning my hobby into a career might take away the joy I found in it.
Instead, I pursued a career in law enforcement, where I spent 14 years serving in a variety of roles, including patrol officer, field training officer, and detective. It was a career I was proud of, and I found a great deal of purpose in it. But deep down, I always felt there was another creative side of me that I hadn’t fully explored.
In 2024, everything changed. I suffered an on-duty injury that kept me sidelined for nearly a year and ultimately led to my retirement from law enforcement. What could have been the end of one chapter became the beginning of another.
I’d been making pizza at home for years, experimenting with different ovens and techniques, but during my recovery I immersed myself in the craft. I approached pizza almost like a science—studying ingredients, fermentation, hydration, and baking methods until I developed recipes that I felt truly reflected my vision.
When it came time to decide what was next career wise, I had plenty of options. But I kept coming back to one thing: pizza. It combined my passion for cooking with the opportunity to build something of my own.
The next decision was what style of pizza to focus on. Growing up between New York and California, I developed a deep appreciation for a classic New York slice. I also realized there weren’t many places on the Central Coast dedicated to doing that style authentically. I’ve made everything from wood-fired Neapolitan and Detroit-style pizzas to Grandma pies and sourdough, but New York-style pizza always felt like home.
From there, every detail mattered. I committed to staying true to the style while using the best ingredients I could source. I spent countless hours refining my dough until I landed on the perfect balance of flour, hydration, and fermentation. The result is a crust that’s crisp on the outside, soft and airy on the inside, and full of flavor.
I was just as intentional with the other essentials. The tomatoes and cheese I use are ingredients I won’t compromise on because they’re the foundation of every pizza I make. Great dough, great sauce, and great cheese are what define authentic New York pizza.
Once those fundamentals were in place, I turned my attention to developing recipes and creating the Revolve Craft Pizza brand. I don’t think anyone is reinventing pizza, and that’s not my goal. My menu celebrates the classics while incorporating ideas and techniques inspired by some of the country’s most respected pizza makers. It’s about honoring tradition, using exceptional ingredients, and making every pizza the best version of itself.
Today, every pizza I serve represents a journey, and ultimately led me to pursue the passion I’d carried with me all along. I get to spend more time with my kids, get them involved in the process and have a little more flexibility to enjoy life. I couldn’t be happier with where that journey has taken me.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
I don’t starting any business is a smooth road. The biggest challenges I’ve come across include creating recipes, sourcing ingredients, getting financed, balancing budgets, etc. Pretty much all the same struggles as any small business owner or restaurant. I’m still trying new things and refining as a go. The challenges are what make it fun!
Alright, so let’s switch gears a bit and talk business. What should we know?
Revolve Craft Pizza is a San Luis Obispo County based food trailer specializing in authentic New York-style pizza. I bring the trailer to breweries, wineries, concerts, and community events. I also offer full service catering for private parties, weddings, and other gatherings throughout the area.
What sets Revolve Craft Pizza apart is the commitment to quality and the belief that great pizza starts with great ingredients and attention to detail. I try to source the best ingredients so I can and make as much as possible from scratch, including the dough, sauces, sausage, and other components. There are no shortcuts when it comes to the food. I want every pizza that comes out of the oven to be something I’m proud to put my name on.
Revolve is also about more than just pizza. I wanted to create a brand with its own personality. Something that feels nostalgic, fun, and a little different. The brand draws inspiration from t
90’s East Coast hip-hop culture, which is reflected in the name, artwork, and overall aesthetic. It’s a nod to a time and culture that I’ve always loved, while still creating something that feels distinctly my own.
I’m probably most proud of how quickly the brand has developed and the response it has received. Starting a food business is a tremendous amount of work, and there are plenty of long days, late nights, and challenges that people never see behind the scenes. But then when someone takes that first bite and tells me it’s the best pizza they’ve ever had, or a customer from New York tells me that it reminds them of home, and suddenly all of those hours feel completely worth it.
Those moments are what motivate me to keep improving. I’m constantly experimenting, refining recipes, listening to customers, and looking for ways to make Revolve better. My goal isn’t simply to make good pizza; it’s to build a brand that people recognize, remember, and genuinely get excited to see at their favorite brewery, winery, event, or celebration.
At the end of the day, I want Revolve Craft Pizza to be known for two things: really great pizza and an experience people are excited to come back for.
If we knew you growing up, how would we have described you?
I’d say I was a pretty normal kid, but I was fortunate to grow up between two very different places—Southern California and Upstate New York. Having the opportunity to experience both environments at a young age had a pretty significant influence on who I am today.
Growing up in New York during the 90s is where I developed my love for hip hop and the culture that surrounded it. There was an energy, creativity, and authenticity to that era that has always stuck with me. At the same time, growing up in California gave me a completely different perspective, the laid-back lifestyle, the culture, and the overall pace of life here are a big part of my personality.
In a lot of ways, Revolve Craft Pizza is a reflection of those two sides of me. You can see the New York influence in the pizza itself and in the 90s hip-hop-inspired branding, while the California influence comes through in the relaxed, approachable atmosphere and the way I want people to experience the business.
I think those two very different experiences helped shape not only who I am, but also what I’m creating with Revolve. It’s my way of taking pieces of both places that influenced me and putting them into something that’s uniquely mine.
