Meet Lindsay Huddle of Central Coast (California)

Today we’d like to introduce you to Lindsay Huddle.

Hi Lindsay, please kick things off for us with an introduction to yourself and your story.
I started Lindsay’s Little Bakery at 16 years old, right here in the Santa Ynez Valley where I’ve lived my whole life. What began as a passion project – baking for friends, family, and local events – slowly became something I couldn’t imagine not doing.
For a long time, I operated the way most small bakers do: out of my home kitchen, taking custom orders, figuring it out as I went. But I always had this bigger vision of what a dessert experience could look like. Not just a cake on a table, but something people actually remember. Something that feels like part of the celebration.
That vision is what led me to go mobile. I now operate three mobile setups – including two restored vintage trailers that honestly steal the show at every wedding – and I do all the baking myself. I specialize in weddings and private events here in the California Central Coast, and I’ve built the business around the idea that dessert should be an experience, not an afterthought.
The Santa Ynez Valley has been both my home and my inspiration from day one. There’s something truly special about building a business in a community you genuinely love – where you watch families grow and get to be part of their most meaningful celebrations, from bridal showers and weddings to baby showers and first birthdays.
This valley has always had a way of blending small-town warmth with a real appreciation for experience, elegance, and beauty. That spirit is woven into everything I create.
I’m still the girl who fell in love with baking as a teenager, but have now channeled it into a truly memorable (and delicious) experience for my customers!

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Smooth? Not exactly. But I wouldn’t trade the bumps for anything.
When I started, I was in high school with zero business experience. I knew how to bake, but running a business is a whole different skill set that nobody hands you a manual for. Everything from building a brand, to figuring out which events were the right fit, to learning how to book and manage private clients was self-taught through a whole lot of trial and error.
And I mean that literally. I once baked for nearly 40 hours straight for Thanksgiving orders because I had said yes to too many orders and wasn’t about to let anyone down. I don’t recommend it, but I also can’t say I regret it. That’s just who I am. If I commit to something, I see it through, even if it means running on sheer determination.
There were seasons where I said yes to the wrong things, undercharged, over-delivered, and had to slowly learn what it actually meant to run a sustainable business – not just a busy one. Learning to trust my instincts about which events aligned with my vision, and which didn’t, was a process that took years.
But honestly? Growing up in the industry the way I did gave me something you can’t fast-track. I built this business from the ground up, figured out what worked for me, and every hard lesson along the way shaped the business, and the experience – that Lindsay’s Little Bakery is today.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Lindsay’s Little Bakery is a boutique mobile bakery specializing in weddings and private events in the Santa Ynez Valley and California central Coast. What sets us apart starts with the setup itself – I operate three mobile setups, including two restored vintage trailers and a bakery cart that bring a warmth and nostalgia that no banquet table ever could. Every event feels intentional, curated, and completely one-of-a-kind.
I specialize in creating dessert experiences – not just beautiful food, but a moment that fits seamlessly into the aesthetic and emotion of the event. From full tiramisu service to custom cookie buffets to elegantly styled dessert displays, everything is designed to feel like it belongs there. Because in the Central Coast, the bar for beauty is high, and I love meeting it.
What I’m most proud of is that I do all the baking myself. Every single thing that leaves my kitchen has my hands on it. That level of care and consistency is something I refuse to compromise on, and I think clients feel that difference.
But honestly, what I’m most proud of is the experience clients have from the first inquiry to the last bite. In a region surrounded by world-class wine, stunning venues, and incredible vendors, I want dessert to hold its own as a centerpiece of the celebration – not an afterthought.
The vintage trailer doesn’t hurt either. 😄

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
I think the mobile and experiential side of event desserts is only going to grow. What was once considered a unique, boutique touch is becoming something couples and hosts actively seek out – and I think that’s just the beginning.
For a long time, dessert at events was an afterthought. A table at the back of the room that guests wandered over to at the end of the night. But there’s been a real shift in how people think about celebrations – every element is now an opportunity to create something beautiful, intentional, and memorable. Dessert is no exception.
I think over the next 5-10 years, mobile dessert experiences are going to move fully into the mainstream. People want their events to feel curated from start to finish, and a stunning vintage trailer or an elegantly styled dessert display does something a standard banquet setup simply can’t – it becomes part of the atmosphere, part of the story, part of the photos.
The couples and clients I work with aren’t just hiring a baker. They’re investing in an experience. And as that mindset continues to spread, I think the industry is going to see a lot more of what we’ve been doing here in the Santa Ynez Valley for years – treating dessert as a centerpiece, not an afterthought.
We’ve always believed it deserved that spotlight. It’s exciting to watch the rest of the world catch up.
