Hidden Kitchen started as a very personal and very organic project rooted in food, family, and community. What began as a small blue corn waffle stand on California’s Central Coast slowly evolved into something much bigger — a gathering place that celebrates heritage ingredients, creativity, and connection.
From the beginning, our focus was never just about serving food. We were inspired by the idea that a meal can tell a story — about culture, place, health, and hospitality. Our signature blue corn waffles became the centerpiece because they’re visually unexpected, nutritious, and deeply tied to heirloom ingredients and traditional foodways. People were curious, and that curiosity opened the door to conversations, relationships, and community.
Over the years, Hidden Kitchen grew through word of mouth and through the support of locals and travelers who connected with what we were creating. We expanded from Cambria into Cayucos while trying to stay true to the same values that shaped the original concept: thoughtful sourcing, vibrant flavors, inclusivity, and creating spaces that feel welcoming and memorable.
Today, Hidden Kitchen in both locations continue to evolve, but the heart of the project remains the same. We’re still passionate about creating food experiences that feel joyful, nourishing, and a little magical — whether someone is visiting us for the first time on a road trip up Highway 1 or they’ve been part of the community since the early days.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It definitely has not been a completely smooth road — like most small businesses in hospitality, there have been a lot of challenges along the way. Hidden Kitchen grew very organically, and while that’s something we’re proud of, it also meant learning many lessons in real time.
One of the biggest challenges has been balancing creativity with the realities of running restaurants. Hospitality can be unpredictable, especially in small coastal towns that depend heavily on tourism and seasonal traffic. Staffing, rising food costs, supply chain issues, and the overall pace of the industry have all required constant adaptation.
The pandemic was obviously a major turning point as well. Like many restaurants, we had to rethink operations overnight and find ways to continue serving our community while protecting our team and staying financially afloat. It forced us to become even more flexible and intentional about what we were building.
At the same time, growth itself can be challenging. As Hidden Kitchen expanded from Cambria into Cayucos we had to figure out how to maintain the spirit and authenticity of the original concept while scaling operations responsibly. Protecting the culture, quality, and experience has always mattered deeply to us.
But honestly, many of the struggles have also shaped the identity of the business. We’ve learned to stay resilient, community-focused, and open to evolving. The support from locals, travelers, and our staff has been a huge part of what has allowed us to keep growing and refining the vision over the years.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Professionally, my work has always lived at the intersection of hospitality, creativity, community-building, and wellness-focused food, plus a livelihood that actually supports me mentally and physically. Hidden Kitchen was built around the idea that restaurants can be more than places to eat — they can become spaces that spark curiosity, connection, and memorable experiences – they can pay their employees well and be symbiotic in a very intense industry!
I love creating a concepts that feels both distinctive and approachable. The blue corn waffles became an unexpected signature, not only because of their visual appeal, but because they reflect my larger philosophy around heirloom ingredients, funky food, thoughtful sourcing, and playful presentation. I’ve loved creating something that feels unique to the Central Coast while still welcoming people from all backgrounds to give it a try.
A big part of my professional focus has also been creating environments that feel joyful and inclusive, and aesthetically pleasing. I care deeply about the guest experience — not just the food itself, but the atmosphere, the storytelling, the art, the music, and the feeling people leave with afterward. That attention to emotional connection is something I’ve worked hard to cultivate over the years and was very influenced by throughout my childhood.
What I’m most proud of is that Hidden Kitchen grew largely through authentic community support and word of mouth. I never approached it as a formula-driven restaurant project. Instead, I stayed committed to building something genuine, creative, and values-driven, and people responded to that in a meaningful way.
What quality or characteristic do you feel is most important to your success?
I think the most important quality behind my success has been authenticity. I’ve always tried to create from a genuine place rather than chasing trends or following a conventional formula. Hidden Kitchen grew because it reflected something real — my love of creativity, hospitality, connection, and thoughtful food — and people responded to that honesty.
Resilience has also been incredibly important. Building and sustaining a restaurant business requires constant adaptability. There are always challenges, setbacks, and unexpected changes, especially in hospitality. Being able to stay grounded, continue evolving, and keep moving forward even during difficult periods has been essential.
I’d also say curiosity has played a big role in shaping both the business and my personal growth. I’m always inspired by art, travel, culture, wellness, music, and design, and I think that openness to inspiration helped Hidden Kitchen become something that feels unique and multidimensional rather than just a typical restaurant concept.
At the end of the day, I genuinely care about how people feel when they walk through our doors. Creating meaningful experiences and fostering connection has always been at the center of what I do.
