I’ m Annik, the florist behind Fancy Pansy.
After earning my florist diploma in Germany and running a successful wedding flower business in New Zealand, I brought my passion for floral design to California.
Today I create artistic, garden-inspired flowers for weddings along the Central Coast, from intimate elopements to full celebrations.
Every design is custom and created with care, creativity, and a love for beautiful moments.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It has actually been a pretty smooth journey. I earned my florist diploma in Germany 15 years ago and opened my first business in New Zealand around 2017. Back then, reels and social media algorithms weren’t such a big part of growing a business. I was fortunate to win a business award with a YouTube video I created showing how to make a floral hoop.
When I moved to California, I started my business right away but also worked for another florist for a few years until I felt confident enough to go out on my own. Since I had just become a mom, I intentionally wanted a slow and steady start, and that’s exactly what happened. My business has grown a little more every year, allowing me to build it at a pace that felt right for both my family and me. I couldn’t be happier with how the journey has unfolded.

I am the owner and lead designer of Fancy Pansy, a wedding and event floral design studio based on California’s beautiful Central Coast. I specialize in creating whimsical, garden-inspired floral designs that feel organic, romantic, and deeply personal. Every wedding is different, and I love designing flowers that reflect each couple’s story instead of following trends.
One of my favorite parts of my work is transforming a space into something that feels magical. Whether it’s an intimate dinner overlooking the Pacific or a large celebration under the redwoods, I enjoy creating installations that feel as though they naturally belong in their surroundings.
I think what sets me apart is that I combine European floral training with years of experience in both Germany and New Zealand before bringing my business to California. My designs are inspired by nature rather than perfection, I love movement, texture, unexpected color combinations, and flowers that look as if they have just been gathered from a beautiful garden.
I’m also proud that Fancy Pansy has grown almost entirely through word of mouth and the trust of wonderful clients and planners. Building a successful business while raising my daughter has been one of my greatest achievements. Knowing that couples trust me with one of the most meaningful days of their lives is something I never take for granted.
Do you have any memories from childhood that you can share with us?
Some of my favorite childhood memories are of wandering through my grandparents’ garden in Germany. My grandmother loved experimenting with and breeding new flower varieties, and I was fascinated by everything growing around me. I still remember the smell of warm tomatoes, ripe peaches, herbs, flowers, and all the fruits and vegetables in the garden.
I also spent hours exploring the nearby forests, where I always found a sense of peace and freedom. I could disappear into nature for an entire afternoon, observing every little color, texture, and detail around me. Those quiet moments in the garden and the forest shaped my love of nature and continue to inspire the way I see and create today.
